How to Make Vegan Icing

Traditional cake icings use butter or lard to create a sweet topping. These ingredients are not considered vegan, leaving many who shun all animal products avoiding dessert. Substituting vegan ingredients, such as silken tofu, for the traditional butter or lard lets you say to your vegan friends, "Let them eat cake --- with icing."

Things You'll Need

  • 1 cup silken tofu
  • 1 tbsp. lemon juice
  • 2 tsp. vanilla extract
  • Hand or stand mixer
  • 4 cups powdered sugar
  • Spatula

Instructions

  1. Beat the tofu, lemon juice and vanilla with a hand or stand mixer until combined and smooth. There should not be any lumps in the mixture.

  2. Slowly mix in the powdered sugar to the icing ingredients with the beaters running on low speed. Add the powdered sugar a little at a time, beating after each addition until you cannot see any dry powdered sugar in the icing mix.

  3. Mix the sugar into the icing until it becomes light and fluffy, about five to six minutes. At this point the mixture should resemble a fluffy white cake frosting.

  4. Spread the frosting over your favorite baked and cooled vegan cake or cupcake with a spatula. Discard any leftover icing.
