How do you make vegan pound cake?
Ingredients:
- 1 3/4 cups (220g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks/227g) unsalted vegan butter, softened
- 1 1/2 cups (300g) granulated sugar
- 1/4 cup (60ml) unsweetened non-dairy milk
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) lemon juice
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until light and fluffy, 2-3 minutes. Beat in the non-dairy milk, vanilla extract, and lemon juice until combined. Gradually add the dry ingredients and beat until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
- Slice and serve.
