Ingredients:
* 2 large flour tortillas
* 1/2 cup vegan cheese shreds (your favorite kind!)
* 1/4 cup chopped onions
* 1/4 cup chopped bell peppers (any color)
* 1/4 cup diced mushrooms
* 1/4 cup chopped black beans, rinsed and drained
* 1/4 cup salsa
* Optional: Vegan sour cream, guacamole, hot sauce
Instructions:
1. Prep the fillings: Chop all your vegetables and have them ready to go. Warm up your black beans in the microwave or on the stovetop.
2. Warm the tortillas: Heat a large skillet or griddle over medium heat. Warm each tortilla for about 15 seconds per side until slightly pliable.
3. Assemble the quesadillas: Place one tortilla on a flat surface. Spread half the vegan cheese over the tortilla, leaving a 1/2 inch border. Top with half of the vegetables, beans, and salsa. Place the second tortilla on top.
4. Cook the quesadillas: Place the quesadilla in the hot skillet or griddle. Cook for about 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted.
5. Serve: Cut the quesadilla in half and serve immediately.
Tips:
* Spice it up! Add your favorite spices to the fillings, such as cumin, chili powder, or paprika.
