How to Make a Vegan Sandwich Spread

It's hard to find a vegan sandwich spread recipe that's filling, flavorful and easy to make. This one is all three, featuring fresh vegetables and zesty spices that combine for rich layers of texture and taste.

Things You'll Need

  • 2 large tomatoes
  • 1 cucumber
  • 2 celery stalks
  • ½ cup red onion
  • ½ 6-oz. can olives
  • 1 cup alfalfa sprouts
  • 2 avocados
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. canola or extra light virgin olive oil
  • 1 to 2 tbsp. Dijon mustard
  • 1 clove minced garlic
  • 1 tsp. dill
  • 2 tsp. lemon juice
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ cup pepitas or sunflower seeds

Instructions

  1. Dice tomatoes, cucumber, celery, red onion and olives. Toss together in large mixing bowl.

  2. Break up the alfalfa sprouts as much as possible, add to the ingredients in Step 1, and mix until alfalfa sprouts are distributed evenly throughout.

  3. Mash the avocados, add to the vegetable mixture and stir.

  4. Mix the apple cider vinegar, vegetable oil, Dijon mustard, crushed garlic, dill, lemon juice, salt and pepper in a separate bowl.

  5. Add the ingredients from Step 4 to the vegetable mixture.

  6. Add pepitas or sunflower seeds and stir.

  7. Chill for 30 minutes and serve.
