Does clarified butter have less fat then butter?

Clarified butter, also known as ghee, has less fat than regular butter.

Regular butter is made by churning cream until the fat separates from the liquid (buttermilk). It contains about 80-85% fat, 15% water, and 1% milk solids.

Clarified butter is made by heating regular butter until the water and milk solids separate from the fat. The milk solids are then removed, leaving behind the clarified butter. This process reduces the fat content of the butter to around 99%, with the remaining 1% being water and trace amounts of milk solids.

So, clarified butter has less fat than regular butter and is almost pure fat, making it shelf-stable and great for high-heat cooking.
