Sweet Potato Pie in a Jar
This recipe creates individual servings of sweet potato pie, perfect for gifting or enjoying a little sweetness on your own!

Ingredients:
* For the filling:
* 2 cups cooked and mashed sweet potato (about 2 medium sweet potatoes)
* 1/2 cup granulated sugar
* 1/4 cup packed light brown sugar
* 1/4 cup unsalted butter, melted
* 2 large eggs
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon ground ginger
* 1/4 teaspoon salt
* 1/4 cup heavy cream
* For the crust:
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon salt
* 1/2 cup (1 stick) unsalted butter, chilled and cubed
* 1/4 cup ice water
* For the topping:
* Whipped cream
* Pecans, chopped (optional)
Equipment:
* 6 (8-ounce) mason jars with lids
* Large mixing bowl
* Whisk
* Handheld mixer
* Small saucepan
* Oven
Instructions:
1. Prepare the crust:
* Preheat oven to 350 degrees F (175 degrees C).
* Combine flour and salt in a large bowl. Cut in butter using a pastry blender or your fingertips until mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, until dough comes together.
* Divide dough into 6 portions and press each portion evenly into the bottom and sides of a mason jar.
* Bake crusts for 10-12 minutes, or until lightly golden. Set aside to cool.
2. Prepare the filling:
* In a large bowl, combine mashed sweet potato, granulated sugar, brown sugar, melted butter, eggs, cinnamon, nutmeg, ginger, and salt. Beat with a handheld mixer until smooth and creamy. Stir in heavy cream.
3. Assemble the pie:
* Pour the sweet potato filling into the cooled crusts, filling each jar about 3/4 full.
* Bake for 35-45 minutes, or until filling is set and crust is golden brown.
* Let cool completely before topping.
4. Garnish and serve:
* Top with whipped cream and chopped pecans, if desired.
* Serve chilled or at room temperature.
Tips:
* You can substitute pumpkin puree for the sweet potato, but adjust the baking time accordingly.
* If you don't have mason jars, you can use ramekins or other oven-safe cups.
* For a more intense flavor, add a pinch of cayenne pepper to the filling.
* Feel free to experiment with other toppings, such as a drizzle of caramel sauce or a sprinkle of cinnamon.
