Homemade Butterscotch Pie

Butterscotch is similar to caramel, but it is made with brown sugar rather than white sugar. This seemingly subtle difference dramatically affects the flavor of the finished product; the molasses in brown sugar adds an extra depth and richness to butterscotch. While butterscotch is a common topping for ice cream or other desserts, this is not the only way to enjoy its flavor. You can also use it to make a richly flavored butterscotch pie.

Things You'll Need

  • 3 egg yolks
  • 2 bowls
  • Whisk
  • 4 tbsp. flour
  • ½ tsp. salt
  • 2 cups whole milk
  • 1 cup brown sugar
  • ¼ cup butter
  • Saucepan
  • Wooden spoon
  • 1 tsp. vanilla extract
  • Pie crust

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Beat your egg yolks in a bowl with a whisk for one to two minutes.

  3. Combine the flour, salt and milk in a separate bowl and mix until thoroughly blended. Add the beaten egg yolks and continue to mix until completely blended.

  4. Put the brown sugar and butter in a saucepan and heat, stirring constantly with your wooden spoon, until the mixture becomes liquid rather than grainy. Immediately add the flour, milk and egg mixture to the saucepan. Cook over low heat, stirring constantly, until the mixture thickens. Add the vanilla extract and stir for a moment longer to completely blend the vanilla into the mixture.

  5. Remove the mixture from the heat and stir occasionally while letting it cool slightly, about 10 to 15 minutes.

  6. Pour the cooled mixture into your pie crust. Top with meringue if desired, to use the egg whites you separated for the pie filling. Bake for 10 to 15 minutes. At this point the meringue should be consistently golden, possibly with a few darker patches. Remove the pie from the oven and allow to cool for 10 to 15 minutes before serving.
