Ingredients:
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon salt
* 1 cup (2 sticks) cold unsalted butter, cut into small pieces
* 1/4 cup ice water, plus more if needed
Instructions:
1. Combine Dry Ingredients: Whisk together the flour and salt in a large bowl.
2. Cut in the Butter: Add the cold butter pieces to the flour mixture. Use a pastry blender, two forks, or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining. Do not overmix!
3. Add Ice Water: Gradually add the ice water, one tablespoon at a time, while mixing with a fork. The dough should come together but remain slightly crumbly.
4. Form the Dough: Gently gather the dough into a ball. Divide the dough in half, flatten each disc into a 4-inch round, wrap with plastic wrap, and refrigerate for at least 30 minutes.
5. Roll Out the Dough: On a lightly floured surface, roll one disc of dough into a 12-inch circle. Gently transfer the dough into a pie plate. Trim the edges and crimp as desired.
6. Blind Bake (optional): For some fillings, you may need to blind bake the crust. To do this, prick the bottom of the crust with a fork, line it with parchment paper, and fill it with pie weights or dried beans. Bake at 400°F for 15 minutes. Remove the weights and parchment paper and bake for another 5-10 minutes, or until golden brown.
7. Fill and Bake: Add your chosen pie filling and bake according to your recipe's instructions.
