What is eel pie?

Ingredients:

- 1 1/2 pounds of eels, skinned and boned

- 2 tablespoons of butter

- 1 onion, chopped

- 2 cloves of garlic, minced

- 1/4 cup of flour

- 1 cup of milk

- 1/4 cup of chopped fresh parsley

- Salt and pepper to taste

- 1 egg yolk, beaten

- 1 sheet of puff pastry

Instructions:

1. Preheat oven to 375 degrees F (190 degrees C).

2. In a large saucepan, bring a pot of salted water to a boil and add the eels. Cook for 10 minutes, or until the eels are tender. Drain and set aside.

3. In a large skillet over medium heat, melt the butter. Add the onion and garlic and cook until softened.

4. Stir in the flour and cook for 1 minute, or until the mixture is golden brown.

5. Gradually whisk in the milk and cook until thickened.

6. Add the chopped parsley, salt, and pepper to taste.

7. Stir in the cooked eels.

8. Pour the mixture into a 9-inch pie plate.

9. Brush the edges of the pie dough with the beaten egg yolk.

10. Place the pie dough on top of the filling and crimp the edges to seal.

11. Brush the top of the pie dough with the beaten egg yolk.

12. Bake in the preheated oven for 30 minutes, or until the crust is golden brown.

13. Let cool for 5 minutes before serving.
