How to Make Mock Apple Pie

Mock Apple Pie has been around since the mid 1800's when pioneers made it with soda crackers to "fool" their children. In the 1930's Ritz Crackers began putting their own Mock Apple Pie recipe on their cracker boxes. This recipe is just one of many variations of a Mock Apple Pie recipe that serves 8. One taste and you won't believe there's not one apple in it. Read on to learn how to make it.

Things You'll Need

  • 4 cups water
  • 4 tsp. cream of tarter
  • 50 Ritz crackers
  • 3 cups sugar
  • 1 to 2 tbsp. butter or margarine
  • Cinnamon to taste
  • Cooking spray
  • 2 frozen 9-inch pastry crusts thawed

Instructions

  1. Preheat oven to 425 degrees.

  2. Bring water, sugar and cream of tartar to a boil.

  3. Reduce heat and simmer for 10 minutes.

  4. Crush Ritz crackers in a large bowl.

  5. Remove liquid mixture from heat.

  6. Add crackers slowly, mashing them into the liquid mixture until most of the liquid is absorbed.

  7. Spray pie pan lightly with cooking spray and line pie pan with a 9-inch pie crust.

  8. Pour cracker mixture into pie crust.

  9. Dot with margarine or butter and sprinkle with cinnamon to taste.

  10. Slice second pie crust into strips approximately 3/4-inch- to 1-inch-wide and alternate vertical and horizontal strips on top of pie to make basket weave pie crust. Pinch sealed and flute edges of pie crust.

  11. Bake for 30 to 35 minutes until crust is golden brown and pie is bubbly.
