How to Keep a Boston Cream Pie Overnight

Boston cream pie isn't actually a pie at all, but is instead a cake that consists of a thick custard sandwiched between two layers of yellow sponge cake, topped with smooth, thin chocolate glaze. Invented by a French pastry chef in Boston's Parker House Hotel, Boston cream pie is the state dessert of Massachusetts though its popularity has spread well beyond the state's borders. You can prepare the cake a day before serving and keep it overnight, but you must keep it cold to preserve the rich custard.

Instructions

  1. Measure the height of the cake and select a cake storage container and lid that is no more than about 1 inch taller or wider than the cake. This keeps the amount of air space in the container minimal so the cake doesn't dry out.

  2. Cut two pieces of wax paper to fit over the exposed cake if the cake has already been cut. Push the wax paper gently into place to cover the exposed cake until it sticks. This step, while optional, can help prevent the cake from drying out and also prevents the custard filling from oozing out between the cake layers.

  3. Place the Boston cream pie on the base of the cake storage container. Fit the lid carefully over the cake without touching the sides of top. Seal the lid firmly onto the base.

  4. Store the Boston cream pie in a refrigerator overnight and remove it only immediately before serving. The dessert can be stored for up to two days in the refrigerator. You might notice a sweet, watery liquid accumulates on the base of the cake container. This is simply moisture seeping out of from the moist cake and custard layers, but the cake is still edible if eaten within two days of preparation.
