Gooseberry Pie Recipe

This recipe makes a classic, tart and sweet gooseberry pie perfect for summer.

Ingredients:

For the Crust:

* 2 1/2 cups all-purpose flour

* 1 teaspoon salt

* 1 cup (2 sticks) unsalted butter, chilled and cut into small pieces

* 1/2 cup ice water

For the Filling:

* 4 cups gooseberries, washed and stemmed

* 1 cup granulated sugar

* 1/4 cup all-purpose flour

* 1/4 teaspoon ground cinnamon

* 1/4 teaspoon ground nutmeg

* 1 tablespoon lemon juice

Instructions:

Make the Crust:

1. In a large bowl, whisk together the flour and salt.

2. Cut in the chilled butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

3. Gradually add the ice water, mixing until the dough just comes together.

4. Divide the dough in half. Flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Make the Filling:

1. In a large bowl, combine the gooseberries, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat.

Assemble the Pie:

1. Preheat oven to 375°F (190°C).

2. Roll out one disc of dough on a lightly floured surface to a 12-inch circle. Transfer to a 9-inch pie plate.

3. Pour the gooseberry filling into the pie crust.

4. Roll out the remaining dough to a 12-inch circle. Cut into strips for a lattice top, or simply cut out a circle and place over the filling.

5. Crimp the edges of the crusts together, and brush with milk or an egg wash.

6. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

7. Let the pie cool completely before serving.

Tips:

* If you don't have gooseberries, you can substitute with other berries like raspberries, blackberries, or even a mix of berries.

* Add a tablespoon of cornstarch to the filling for a thicker pie.

* For a richer flavor, add a tablespoon of butter to the filling before baking.
