Classic Turkey Pot Pie

This recipe yields a hearty and delicious pot pie perfect for leftover turkey or a Thanksgiving feast.

Ingredients:

For the Filling:

* 2 tbsp butter

* 1 medium onion, chopped

* 2 celery stalks, chopped

* 1 cup sliced mushrooms

* 1/2 cup all-purpose flour

* 4 cups chicken broth

* 1 cup milk

* 1/2 tsp dried thyme

* 1/4 tsp dried rosemary

* 1/4 tsp salt

* 1/4 tsp black pepper

* 2 cups cooked turkey, shredded

* 1 cup frozen peas

* 1/2 cup frozen carrots

For the Crust:

* 1 1/2 cups all-purpose flour

* 1/2 tsp salt

* 1 cup (2 sticks) cold unsalted butter, cut into small pieces

* 1/4 cup ice water

Instructions:

Make the Filling:

1. Melt butter in a large saucepan over medium heat.

2. Add onion, celery, and mushrooms and cook until softened, about 5 minutes.

3. Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly.

4. Gradually whisk in chicken broth and milk until smooth.

5. Bring to a simmer, then reduce heat to low and cook for 5 minutes, stirring occasionally.

6. Stir in thyme, rosemary, salt, and pepper.

7. Add turkey, peas, and carrots and cook for 2 minutes.

Make the Crust:

1. Whisk together flour and salt in a large bowl.

2. Cut in butter until mixture resembles coarse crumbs.

3. Gradually add ice water, 1 tablespoon at a time, until dough just comes together.

4. Divide dough in half and form each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Assemble the Pot Pie:

1. Preheat oven to 375 degrees F (190 degrees C).

2. Roll out one disk of dough on a lightly floured surface to a 12-inch circle. Transfer to a 9-inch pie plate.

3. Pour turkey filling into the crust.

4. Roll out the remaining dough into a 12-inch circle. Cut into strips for a lattice top or use a cookie cutter to create decorative shapes.

5. Cover filling with the crust and crimp edges to seal. Brush with milk or egg wash and bake for 40-45 minutes, or until golden brown and filling is bubbly.

6. Let cool slightly before serving.

Tips:

* You can use store-bought pie crust to save time.

* Add other vegetables you like, such as chopped potatoes, corn, or green beans.

* For a richer flavor, substitute heavy cream for milk.

* You can freeze leftover pot pie for later. Thaw in the refrigerator overnight and reheat in a 350 degree F oven for 30 minutes.

Enjoy!
