How do you make a homemade Fig Newton?
Ingredients
For the crust:
* 1 3/4 cups (227g) all-purpose flour
* 1/2 cup (113g) unsalted butter, cold and cut into small pieces
* 1/4 cup (50g) granulated sugar
* 1/4 teaspoon salt
* 1 large egg yolk
* 1 tablespoon ice water
For the filling:
* 1 pound (454g) fresh figs, stemmed and chopped
* 1/2 cup (100g) granulated sugar
* 2 tablespoons cornstarch
* 1/4 teaspoon ground cinnamon
* 1/8 teaspoon ground nutmeg
* 1 tablespoon lemon juice
* 1 tablespoon unsalted butter, melted
Instructions
To make the crust:
1. In a large bowl, whisk together the flour, sugar, and salt.
2. Add the butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs.
3. Add the egg yolk and ice water and mix until the dough just comes together.
4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
To make the filling:
1. In a medium bowl, combine the figs, sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
2. Set the filling aside to macerate for at least 30 minutes.
To assemble the Fig Newtons:
1. Preheat the oven to 375 degrees F (190 degrees C).
2. Line a baking sheet with parchment paper.
3. Roll out the dough on a lightly floured surface to a thickness of about 1/8 inch (3mm).
4. Cut the dough into 24 rectangles, each about 3x4 inches (8x10cm).
5. Place 1 tablespoon of the filling in the center of each rectangle of dough.
6. Fold the dough over the filling and pinch the edges together to seal.
7. Place the Fig Newtons on the prepared baking sheet.
8. Brush the Fig Newtons with the melted butter.
9. Bake for 15-20 minutes, until the crust is golden brown and the filling is bubbling.
10. Let the Fig Newtons cool completely on the baking sheet before serving.
