How do you make floating island dessert?

Ingredients:

- 3 egg whites

- 1/4 teaspoon cream of tartar

- 1/2 cup sugar, divided

- 1 cup heavy cream

- 1/4 cup powdered sugar

- 1/2 teaspoon vanilla extract

- Fruit, such as strawberries, blueberries, or raspberries for serving

- Caramel Sauce, for serving (optional)

Instructions:

- Separate egg whites from yolks (save the yolks for another use).

- In a large bowl, whisk egg whites and cream of tartar until soft peaks form.

- Gradually add 1/4 cup of sugar and continue to whisk until stiff peaks form.

- In another bowl, whisk heavy cream, powdered sugar, and vanilla until stiff peaks form.

- Fold the whipped cream mixture into the egg white mixture.

- Drop heaping tablespoons of the mixture into a large pot of simmering water.

- Cook for about 2-3 minutes per side, or until puffed up and firm.

- Remove the islands from the water with a slotted spoon and place on a serving dish.

- Top with the remaining 1/4 cup of sugar and fruit.

- Drizzle with caramel sauce if desired. Serve immediately.
