What chocolate is made of?
Cocoa Solids:
- Cocoa mass (cocoa solids + cocoa butter): made by grinding roasted cocoa beans
- Cocoa powder: cocoa mass that has had most of the cocoa butter removed
- Unsweetened chocolate (bitter chocolate): cocoa mass or cocoa powder and sugar
Cocoa Butter
- The fat extracted from cocoa beans
- Gives chocolate its smooth, creamy texture and shiny appearance
Sugar
- Granulated white sugar is the most common sweetener, but other sugars or sugar substitutes can be used
Milk Solids (in milk chocolate)
- Milk powder, condensed milk, or cream
- Adds a creamy, caramel-like flavour
Emulsifiers (such as lecithin)
- Help to keep the cocoa solids, cocoa butter, and milk solids evenly dispersed throughout the chocolate
Flavouring:
- Vanilla extract is the most common, but other flavourings such as coffee, nuts, fruits, spices, and liqueurs can be added
