Ingredients:
Vanilla pudding mix
Milk
Lemon juice
Lemon zest (optional)
Butter (optional)
Instructions:
In a medium saucepan, combine the vanilla pudding mix and milk.
Cook and stir over medium heat until the pudding comes to a boil.
Reduce heat to low and simmer for 1-2 minutes, or until the pudding has thickened.
Remove the saucepan from the heat and stir in the lemon juice and lemon zest (if desired).
Add butter (optional) for extra richness.
Pour the pudding into a serving dish and chill in the refrigerator for at least 4 hours, or overnight.
