Ingredients

- 2 cups Silk or generic soymilk

- 1 cup sugar

- 1/4 cup cornstarch

- 1/8 teaspoon salt

- 1 teaspoon vanilla extract

- 1/2 cup chopped nuts or fruit (optional)

Instructions

1. In a medium saucepan, whisk together the soymilk, sugar, cornstarch, and salt.

2. Bring the mixture to a boil over medium heat, stirring constantly.

3. Reduce the heat to low and simmer for 1 minute, or until the mixture has thickened.
