How to Make Cinnamon Cookies (9 Steps)

Old-fashioned cinnamon cookies are sweet and tasty, and very easy to make. These are often called cinnamon stars, because they're often cut out with a star-shaped cookie cutter. This recipe makes about two dozen cookies.

  • 1 1/4 cups all-purpose flour
  • 1/3 tsp baking powder
  • 1 1/2 tsps cinnamon
  • 1 egg
  • 1 cup granulated sugar
  • 1 tbsp heavy cream
  • 1/4 tsp salt
  • 1/4 pound unsalted butter (1 stick)
  • 1 1/2 tsps vanilla extract

Instructions

  1. Mix half the cinnamon with 1/4 cup of the sugar and set aside.

  2. Beat the butter until creamy, then add the remaining sugar, beating well, about one minute.

  3. Add the egg, vanilla and cream and beat together thoroughly.

  4. Stir in remaining cinnamon.

  5. Stir together the flour, salt and baking powder and add to the butter mixture. Stir together well, then chill for 30 minutes.

  6. Heat the oven to 350 degrees.

  7. Roll the dough into balls and place on cookie sheets about two inches apart.

  8. Generously butter the flat bottom of a glass or other flat utensil, like a measuring cup or small pan. Dip it into the cinnamon sugar and flatten the cookie balls a little, about halfway, so some of the cinnamon sugar sticks to the top of the cookie. Don't smush them too flat because they'll spread as they cook.

  9. Bake for about 8 minutes, or until the edges just start to turn golden.
