Classic New York Cheesecake Recipe

This recipe yields a rich, creamy cheesecake with a buttery graham cracker crust. It's a classic for a reason!

Ingredients:

For the Crust:

* 1 1/2 cups graham cracker crumbs

* 1/4 cup sugar

* 5 tablespoons (2 1/2 ounces) unsalted butter, melted

For the Filling:

* 3 (8 ounce) packages cream cheese, softened

* 1 1/2 cups granulated sugar

* 1/2 cup sour cream

* 2 large eggs

* 1 teaspoon vanilla extract

Instructions:

1. Prepare the Crust:

* Preheat oven to 350°F (175°C).

* Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes. Let cool completely.

2. Prepare the Filling:

* In a large bowl, beat cream cheese and sugar on medium speed until smooth. Beat in sour cream, eggs, and vanilla extract until combined.

3. Bake the Cheesecake:

* Pour filling into the cooled crust. Place springform pan in a larger baking pan. Pour hot water into the larger pan until it comes halfway up the sides of the springform pan.

* Bake for 50-60 minutes, or until the center is just set. The edges should be slightly browned.

* Turn off the oven and leave the cheesecake inside for another hour.

* Let cool completely before serving.

Tips:

* For a richer flavor, use full-fat cream cheese and sour cream.

* Don't over-bake the cheesecake. It should have a slight wobble in the center.

* For a smoother texture, strain the cheesecake filling through a fine-mesh sieve before baking.

* You can add flavor variations to the filling, such as chocolate chips, fruit, or nuts.

Enjoy!
