Making sugar-free plum jelly is surprisingly simple, and the results are surprisingly delicious! Here's how:
Ingredients:
* 5 cups ripe plums, pitted and chopped
* 1 cup water
* 1/2 cup lemon juice
* 1/4 cup granulated monk fruit sweetener (or other sugar substitute)
* 1 packet (1.75 oz) powdered fruit pectin
Equipment:
* Large pot
* Fine mesh sieve or cheesecloth
* Measuring cups and spoons
* Small bowl
* Jelly jars (sterilized)
* Wax paper or lids
Instructions:
1. Prepare the plums: Combine the plums, water, and lemon juice in a large pot. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 30 minutes, or until the plums are very soft.
2. Strain the juice: Line a fine mesh sieve or cheesecloth over a large bowl. Pour the cooked plum mixture into the sieve and let it drain for 30 minutes, or until all the juice has extracted.
3. Make the jelly: Measure out 3 cups of the extracted plum juice. In a small bowl, whisk together the monk fruit sweetener and pectin. Pour the juice into the pot and bring to a rolling boil over medium-high heat.
4. Add the pectin mixture: Gradually add the pectin mixture to the boiling juice, stirring constantly. Bring the mixture back to a rolling boil and cook for 1 minute, stirring constantly.
5. Test the set: Place a small amount of the hot jelly onto a chilled plate. If it sets up within a few minutes, the jelly is ready. If not, continue to cook for another minute, and test again.
6. Jar the jelly: Pour the hot jelly into sterilized jars, leaving 1/4 inch headspace. Wipe the rims of the jars with a clean damp cloth. Cover with lids and process in a boiling water bath for 10 minutes.
7. Cool and store: Remove the jars from the water bath and let cool completely. Once cool, check for a good seal by pressing on the center of the lid. If it doesn't pop back up, the jar is sealed. Store the jelly in a cool, dark place for up to a year.
Tips:
* Flavor variations: Add a pinch of cinnamon, ginger, or cardamom to the pot with the plums for added depth of flavor.
* Sugar substitute: Experiment with other sugar substitutes like erythritol, stevia, or agave nectar, adjusting the amount according to the sweetener's sweetness level.
* Storage: To keep the jelly fresh for longer, you can also freeze the jelly for up to 6 months.
