Prep time: 5 minutes

Cook time: 10-15 minutes

Ingredients:

For the hotcakes:

* 1 cup all-purpose flour

* 2 tablespoons granulated sugar

* 2 teaspoons baking powder

* 1/2 teaspoon salt

* 1 egg

* 1 cup milk

* 2 tablespoons melted butter

For the syrup:

* 1 cup granulated sugar

* 1/2 cup water

* 1/4 cup maple syrup (optional)

Instructions:

For the hotcakes:

1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

2. In a separate bowl, whisk together the egg, milk, and melted butter.

3. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix.

4. Heat a lightly greased griddle or skillet over medium heat.

5. Pour 1/4 cup of batter onto the hot griddle for each hotcake.

6. Cook for 2-3 minutes per side, or until golden brown and cooked through.

7. Serve immediately with your favorite toppings.

For the syrup:

1. In a small saucepan, combine the sugar, water, and optional maple syrup.

2. Bring to a boil over medium heat, stirring constantly.

3. Reduce heat to low and simmer for 5 minutes, or until the syrup thickens slightly.

4. Remove from heat and serve over hotcakes.

Tips:

* To make thicker pancakes, use less milk.

* To make fluffier pancakes, beat the egg whites separately until stiff peaks form and gently fold them into the batter.

* For a different flavor, add 1 teaspoon of vanilla extract to the batter.

* Get creative with toppings! Fresh berries, whipped cream, chocolate chips, and nuts are all delicious additions.

Enjoy!
