How to Make a Frozen Cake (13 Steps)

Don't let the title fool you. It might sound difficult to prepare a frozen cake, but it isn't with this recipe. You assemble this cake, not bake it. You can't go wrong with ingredients like ice cream, raspberry sorbet, pound cake and fresh raspberries. According to pickyourown.org, "Raspberries are so expensive in the grocery store because, since they are so soft, they bruise easily, spoil quickly and do not ship well"; if possible, pick your own.

Things You'll Need

  • 2 (10 3/4 oz.) frozen pound cakes, crusts removed and sliced into 1/4-inch thick slices (3 horizontal slices)
  • 3 cups vanilla bean ice cream, slightly softened
  • 4 cups raspberry sorbet, slightly softened
  • 1 pint fresh raspberries, rinsed
  • 3 tbsp. raspberry-flavored liqueur

Instructions

  1. Trace and cut out a 9-inch circle from parchment paper and fit it into the bottom of 9-inch springform pan.

  2. Cut out a 3-inch by 27-inch strip of parchment and fit it around the inside of the pan. Tape to secure parchment paper.

  3. Cover the bottom of the pan with one layer of pound cake.

  4. Spread the ice cream over the cake.

  5. Freeze until ice cream hardens, about 25 minutes.

  6. Spread 2 cups of sorbet over the ice cream.

  7. Add second layer of pound cake.

  8. Return to freezer for 10 minutes.

  9. Combine raspberries and liqueur.

  10. Place berries over the top of the frozen cake.

  11. Place last layer of pound cake on top.

  12. Spread remaining sorbet on top.

  13. Wrap cake tightly with plastic wrap. Freeze at least 4 hours.
