What is potassium metabisulfate?

Potassium metabisulfite is a white crystalline solid with a chemical formula of KHSO3. It is a water soluble salt of the ambident anion HS0-3. It is commonly abbreviated as PMBS or KMBS.

Potassium metabisulfite is a salt that is a very effective antioxidant and germicide.

It is often used as a food preservative, particularly to prevent the browning of fruits and vegetables, as well as food and wine spoilage. It is also widely used in the brewing and winemaking industries to prevent unwanted fermentation. It is also often used in the production of paper, leather and textiles. In water treatment, it is used as a disinfectant and to control the growth of algae and biofilm in cooling towers and other water systems.

Properties:

* White or pale yellow crystalline powder.

* Slight pungent odor.

* Highly soluble in water and polar organic solvents.

* Acidic in nature, pH of a 1% aqueous solution is around 2.

* Strong reducing agent, readily releases sulfur dioxide gas upon contact with water or moisture.

* Exhibits antioxidant properties by scavenging free radicals and inhibiting oxidation.

* Acts as a preservative by preventing microbial growth, including bacteria and fungi.

* Exhibits bleaching effects due to its reducing nature.

* Commonly used in food, beverage, chemical, and water treatment industries.

Note: Potassium metabisulfite can be harmful if inhaled or ingested, proper safety measures should be taken while handling it.
