What Are Grains of Paradise?

Although grains of paradise are not widely used outside of North or West Africa, these small seeds are a spice worth seeking out. In the Middle Ages, Europeans used grains of paradise as an inexpensive substitute for black pepper, but modern cooks appreciate their unique aromatic complexity. This dynamic spice is delicious with seafood, meats, vegetables and even spiced desserts like apple pie or gingersnaps.

Exotic Seeds

  • Grains of paradise are small, round seeds that look similar to black peppercorns. Also called alligator pepper or Melegueta pepper, grains of paradise have a mild, peppery heat. The seeds also have aromatic qualities comparable to cloves, citrus and cardamom -- a close relative. Grains of paradise are a common spice in dishes from their native West Africa, and from Morocco and Ethiopia. Crush the seeds with a spice grinder or mortar and pestle to release their flavor and aroma.
