Quick Meringue Recipe (1-2 servings)
Ingredients:
* 2 large egg whites, at room temperature
* 1/4 cup granulated sugar
* Pinch of salt
* 1/2 teaspoon vanilla extract (optional)
Instructions:
1. Prep: Preheat oven to 200°F (93°C). Line a baking sheet with parchment paper.
2. Beat: In a clean, grease-free bowl, beat egg whites with a hand mixer or stand mixer on high speed until stiff peaks form. Add salt and continue beating for 30 seconds.
3. Sugar: Gradually add sugar, 1 tablespoon at a time, beating until fully incorporated and the meringue is glossy.
4. Flavor: Stir in vanilla extract (optional).
5. Pipe or Spoon: Using a piping bag or spoon, drop meringue onto the prepared baking sheet. You can make small mounds or use a piping tip for a more elaborate design.
6. Bake: Bake for 1-1.5 hours, or until the meringues are dry and firm. They should be crisp on the outside and slightly chewy on the inside.
7. Cool: Let the meringues cool completely on the baking sheet before serving.
Tips:
* Room Temperature: Using room temperature egg whites helps them whisk up to a stable meringue.
* Cleanliness: Make sure your bowl and beaters are grease-free. Any traces of fat will prevent the meringue from forming properly.
* Sugar: Don't add the sugar all at once. Gradual addition allows it to dissolve completely, giving you a smoother texture.
* Storage: Store leftover meringues in an airtight container at room temperature for up to 3 days.
