How to Cook Mashed Potatoes With Scallions and Sour Cream

  • Cutting board
  • Sharp knife
  • Large pot
  • Table or kosher salt
  • Potato masher
  • Sour cream
  • Milk or cream
  • Butter

How to Do It

  1. Peel and cut potatoes -- russet, Yukon gold or Idaho potatoes work best for mashed potatoes -- into similar-sized cubes. Add to a pot of cool water along with a dash of table or kosher salt, if desired, and bring to a boil. Reduce heat to a simmer.

  2. Cook potatoes until fork-tender, approximately 20 minutes.

  3. Drain the potatoes and return to the pot.

  4. Add a small amount of milk or cream and desired amounts of butter and sour cream and vigorously mash with a potato masher.

  5. Slice scallions thinly, including both the white and green parts.

  6. Add scallions to mashed potatoes and stir to combine. Top with a few more slices, if desired, before serving.
