In Chinese cooking can cornstarch replace tang flour?
Cornstarch should never be used instead of Tang flour. While many cooks believe that swapping cornstarch for Tang is possible they serve completely different purposes in a recipe. Cornstarch works as a thickening agent whereas Tang, a wheat-based product is mainly used as a leavening agent.
