How to Make Chicken Marinated in Pickle Juice

Rather than pour out the juice when all the pickles in the jar are gone, use the juice as a marinade. Pickle juice contains vinegar and spices such as dill, celery seed, salt, garlic, peppercorns and mustard seed. The spicy and acidic blend of the juice will give chicken a tangy flavor and help tenderize the meat. Chicken marinated in pickle juice is especially good when cooked on the grill.

Things You'll Need

  • Garlic
  • Cilantro
  • Pickle juice
  • Zip-top bag (1 qt or 1 gal. size)
  • Olive oil
  • Chicken

Instructions

  1. Mince 1 clove of garlic and chop 1/4 cup of cilantro. Put both inside the zip-top bag.

  2. Pour 1 cup of pickle juice into the bag along with 1/2 cup of olive oil. Shake to mix with garlic and cilantro.

  3. Add 1 lb. of chicken to the bag and seal. Shake the bag to allow the ingredients to mix. Cut up the chicken or leave whole depending on how you want to cook it.

  4. Allow the chicken to marinate in the bag for at least one hour. Remove chicken from the bag, shake off the extra marinade and grill.
