How to Cook Sausage on a Wood Plank (4 Steps)
Wood plank cooking is a method most commonly used for fish, but you can infuse meat like steaks, pork chops and sausages with woody flavors. Wood planks like cedar, alder or hickory give roasted and grilled meats an unmistakable woody flavor. When shopping for a wooden plank, make sure to purchase untreated wood, as some wood is processed with chemicals that are unsuitable for cooking. You can find wood planks in the grilling section of well-stocked grocery stores or hardware stores and lumber yards.

Soak the plank in water for at least 2 hours and up to 8 hours. Place a bowl on top of the plank to keep it submerged during soaking.

Light a grill for indirect cooking. For gas grills, set all the burners on one side to medium heat. For charcoal grills, arrange the coals on one side and allow them to burn until they are gray with ash.

Transfer the soaked plank to the cool side of the grill. Allow the plank to warm up for 5 minutes.

Place the sausages on the plank. Cook the sausages, flipping occasionally, until they reach an internal temperature of 165 F, about 25 minutes. Serve immediately.
