Can you cook a roast in baking tray without rack?
While it is possible to cook roast without using a rack it is not recommended. Here are some potential issues;
1. uneven cooking: Without a rack, your roast will be sitting on the bottom of the roasting tray, which could cause it to cook unevenly. The meat touching the bottom of the tray will cook faster, leading to overdone or even burnt sections of meat.
2. soggy bottom: cooking meat directly in the meat juices that accumulate on the bottom of the pan might result in a soggy bottom.
3. Difficulty in flipping: Flipping a heavy roast without a rack can be difficult, increasing the risk of accidents or breaking the meat. Flipping the meat allows both sides cook evenly.
If you don't have roasting pan with a rack use a shallow baking sheet or any oven-proof, heat-safe object to elevate your meat. You could use one or more of the following;
- A wire rack fits inside the sheet pan.
- a bed of chopped vegetables,such as carrots, celery and onion.
-a few folded piece of foil placed under roast.
- an oven-proof bowl
