How do you cook southern black eye peas?
Ingredients:
• 1 pound dried black-eyed peas, sorted and rinsed
• 6 cups water
• 1 ham hock (optional)
• 1/2 cup chopped onion
• 1/2 cup chopped celery
• 1/2 cup chopped green bell pepper
• 1 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 teaspoon cayenne pepper
• 1 bay leaf
Instructions:

3. Discard the ham hock and bay leaf.
