How to Make a Cowboy Hat Using Gumpaste
Gumpaste and fondant are sometimes used interchangeably for making figures and embellishments for cakes, but they do not perform the same. Gumpaste cannot be used to cover a cake. It is best suited for making highly detailed figurines because it dries hard and holds its shape. Fondant is softer, best for creating a base for gumpaste designs. For a cowboy hat-shaped cake, make a gumpaste brim with a fondant-covered cake crown. For a smaller cowboy hat decoration, gumpaste works well. Start the project several days in advance to allow for adequate drying.
Things You'll Need
- Cardboard
- Sharp knife or box cutter
- Prepared gumpaste
- Rolling pin
- Parchment paper
- 3 round cakes
- Serrated cake knife
- Buttercream frosting
- Prepared fondant
Cowboy Hat Cake

Trace a large circle on a piece of cardboard or poster board to make the template for the brim. Cut it out with a box cutter or sharp knife.

Roll out the prepared gumpaste to about 1/4 inch thick. Use a clean, sharp knife to cut it to the shape of the template.

Place the gumpaste brim on a sheet of parchment paper and weigh down the center with a bowl. Fold up two sides of the gumpaste circle slightly to make the curve of the brim. Prop up the parchment paper with two books or other sturdy objects so the curve sets as the brim dries.

Let the brim dry for at least two days until it is dry and hard. When it is dry, assemble the cowboy hat cake.

Bake three round cakes. Stack them and use a cake knife to carve the shape of the crown. Make one deep dip in the center and two shallow dips on the tops of either side. Frost the carved cake with a thin layer of buttercream icing.

Roll out the fondant in the same color as the gumpaste brim. Cover the cake with the smooth fondant.

Place the cake crown in the center of the gumpaste brim. Decorate as desired.
Gumpaste Hat Decoration

Make a small, thin circle of gumpaste for the brim. Fold up two sides and prop up with small objects to dry, if necessary.

Mold the gumpaste into the shape of the crown. Use the flat edge of the knife to make dips in the top and sides of the crown.

Place the crown in the center of the gumpaste brim. Use your fingers to press the two parts together. Allow the hat to dry for several days before placing it on the cake.
