Here are the steps to follow the Rubbed Dough Method:
Step 1: Gather your ingredients
-Flour: bread flour or all-purpose flour
-Sugar
-Salt
-Water
-Butter (cold and cut into small pieces)
-Yeast
-A large mixing bowl
-A wooden spoon or spatula
Step 2: Combine the dry ingredients
- Add flour, sugar and salt to the large mixing bowl.
-Mix well until the ingredients are combined.
Step 3: Add the butter
-Drop the cold, cubed butter into the bowl of dry ingredients.
-Using your fingers, rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
Step 4: Add water and yeast
-Make a well in the center of the dry ingredient and butter mixture.
-Pour in the yeast (make sure it is not touching the salt directly) and gradually add water.
Step 5: Mix the dough
-Start mixing the dough with the wooden spoon or spatula, gradually incorporating the dry ingredients into the wet ingredients.
-Knead the dough with your hands until it comes together and forms a ball.
Step 6: Rest the dough
-Place the dough in a greased bowl and cover it with a clean kitchen towel.
-Allow the dough to rest in a warm place for 30 minutes to 1 hour, until it has doubled in size.
Step 7: Shape the dough and bake
-Preheat your oven to the desired temperature.
-Punch down the dough and divide it into two equal portions.
-Shape each portion into a loaf shape and place them in greased loaf pans.
-Bake for 30 to 40 minutes, until the bread has a golden brown crust and sounds hollow when tapped.
