What is a stem pan?

A stem pan (also called a saucier) is a heavy-bottomed saucepan with straight sides and a long, curved handle that comes in a variety of sizes and depths. It’s most often used for making and serving sauces, but it can also be used for cooking down vegetables or fruits, heating liquids, and so much more. Like saucepans, stem pans have a single pouring spout on the edge, unlike a deep sauté pan, which has two short pouring spouts.
