What is the base found in baking powder?

Baking powder typically contains a base called sodium bicarbonate (also known as baking soda).

The other components of baking powder are acid and starch. The acid is usually one or a combination of:

* Cream of tartar

* Monocalcium phosphate

* Sodium aluminum sulfate

The starch is added to keep the acid and base separate until water is added, preventing the baking powder from reacting prematurely.

When water is added, the acid and base react to produce carbon dioxide gas, which causes the baked goods to rise.
