What is pounded loaf sugar?
Loaf sugar or pound loaf is a solid, rectangular mass of sugar formed by compacting granulated sugar into loaf shape. Loaf sugar is hard, solid, and white with various colors added as per consumer preferences. It is popularly used in making a caramel and is mainly sold in small or large cubical and block shapes.
Loaf sugar is hard compared to granulated sugar, so in order to use it, it must first be broken down using tools such as a hammer, sugar nipper, sugar mallet, or sugar tongs. It is not usually served at the dining table but must be crushed or ground into small pieces before being dissolved into beverages or used for baking purposes.
Loaf sugar does not easily absorb moisture and does not form hard lumps like granulated sugar. Instead, it turns back into granulated form while retaining the same sugar properties and sweetness of the granulated variety. Its popularity has declined over the years in the United States, but in South Africa and other parts of the world, it remains a popular choice in some cultures.
