Can bread be digested by the mouth?
Bread cannot be digested in the mouth. Digestion of bread begins in the mouth with the enzyme amylase, which is found in saliva. However, amylase can only break down starches into simple sugars, and bread contains a significant amount of complex carbohydrates that cannot be broken down by amylase. In order to fully digest bread, it needs to be further broken down by other enzymes in the small intestine.
