How to Raise Bread in an Oven
The rise may be the most crucial step in bread-making. Without the rise you are left with a loaf that will cook into a dense brick. There are different reasons for wanting bread to rise during different stages of bread-making. You let dough rest and rise, sometimes multiple times, before shaping it into loaves. After the loaves are shaped, some recipes call for one more rise before the final rise in the heated oven. You can make bread rise in the oven using a few different methods.
Bake Your Bread

Preheat your oven to the temperature specified in your recipe.

Place your bread in the oven when the oven has reached the proper temperature. Your bread will rise as it bakes.

Leave the oven closed until the earliest time specified in your recipe. Heat escapes from the oven when you open it. The loaves could collapse or you could prolong the cooking time if you open the oven door too soon.
Leave Your Bread in the Oven With the Pilot Light On

Put your uncooked bread loaves in the oven with the temperature dial turned to zero.

Close the oven door. If you have a gas oven with a pilot light, the heat from the pilot light will help the bread rise. If your oven has an interior light bulb, you can close the door and turn the light on instead.

Remove the loaves when they have risen. Continue with your recipe.
Steam Uncooked Loaves in a Cold Oven

Fill a teapot or small pot with water and bring it to a boil.

Place uncooked loaves of bread on the top rack of your oven, with the oven turned off.

Fill a shallow pan 2/3 full of boiling water and place it on the rack below your loaves. The warmth from the steam will help your loaves rise.

Close the oven door for 30 minutes. The loaves will puff up slightly. Repeat the process if the loaves have not puffed up sufficiently.
