Pinon Nut Bread (with a twist!)

This recipe combines the deliciousness of pinon nuts with a touch of rosemary and honey for a truly unique flavor.

Ingredients:

* 2 cups all-purpose flour

* 1 teaspoon baking soda

* 1/2 teaspoon salt

* 1/2 teaspoon ground cinnamon

* 1/4 teaspoon ground nutmeg

* 1/4 teaspoon ground rosemary

* 1/2 cup (1 stick) unsalted butter, softened

* 1 cup granulated sugar

* 2 large eggs

* 1/2 cup honey

* 1 cup buttermilk

* 1/2 cup chopped pinon nuts

Instructions:

1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and rosemary.

3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in honey.

4. Add the dry ingredients to the wet ingredients alternately with buttermilk, beginning and ending with dry ingredients. Mix until just combined.

5. Fold in the chopped pinon nuts.

6. Pour batter into the prepared loaf pan.

7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

8. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

Tips:

* For a more intense rosemary flavor, use fresh rosemary.

* If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk.

* Feel free to add other nuts or dried fruit to the bread.

* This bread is delicious toasted with butter or served with a dollop of whipped cream.
