Caramelized Onion & Goat Cheese Tart

Ingredients:

Instructions:
Make the crust:
1. Whisk together flour and salt in a large bowl. Cut in butter with a pastry blender or two knives until mixture resembles coarse crumbs.
2. Gradually add ice water, mixing until dough just comes together. Form into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
Prepare the filling:
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until softened and golden brown, about 20-25 minutes. Season with salt and pepper.
3. Deglaze the pan with white wine or chicken broth, scraping up any browned bits. Simmer until liquid reduces slightly, about 2 minutes.
Assemble the tart:
1. Roll out dough on a lightly floured surface to a 12-inch circle. Transfer to a 9-inch tart pan with removable bottom. Trim excess dough.
2. Spread the caramelized onion mixture evenly over the crust. Sprinkle with goat cheese and Parmesan cheese.
3. In a small bowl, whisk together the egg and thyme (if using). Brush the egg wash over the edges of the crust.
