I am canning and need 8 qts of chopped tomatoes....How many pounds whole tomatoes will it take to make qts?

Approximately 14-15 pounds of whole tomatoes will be needed to make 8 quarts of chopped tomatoes.

To can tomatoes, you will need:

- 14-15 pounds of ripe tomatoes

- A large pot

- A colander

- A sharp knife

- A cutting board

- A canning funnel

- Canning jars

- Canning lids and rings

- A jar lifter

- A boiling water canner

Instructions:

1. Wash the tomatoes thoroughly.

2. Cut the tomatoes into quarters.

3. Place the tomatoes in a large pot and bring to a boil over medium heat.

4. Reduce heat to low and simmer for 15 minutes, or until the tomatoes are softened.

5. Drain the tomatoes through a colander.

6. Chop the tomatoes into small pieces.

7. Return the chopped tomatoes to the pot and bring to a boil over medium heat.

8. Reduce heat to low and simmer for 5 minutes.

9. Remove the pot from the heat and let stand for 5 minutes.

10. Ladle the hot tomatoes into the canning jars, leaving 1 inch of headspace at the top of each jar.

11. Wipe the rims of the jars with a damp cloth.

12. Place the lids on the jars and screw on the rings.

13. Process the jars in a boiling water canner for 40 minutes.

14. Remove the jars from the canner and let cool for at least 12 hours before serving.
