How to make beef stew recipe for two people?
Beef Stew for Two: A Cozy and Comforting Meal
This recipe is simple to make and can be easily adapted for a larger crowd.
Ingredients:
* 1 lb boneless beef stew meat, cut into 1-inch cubes
* 1 tablespoon olive oil
* 1 medium onion, chopped
* 2 cloves garlic, minced
* 1 tablespoon all-purpose flour
* 1 (14.5 oz) can diced tomatoes, undrained
* 1 (10.75 oz) can condensed beef broth
* 1 cup water
* 1/2 cup red wine (optional)
* 1 teaspoon dried thyme
* 1/2 teaspoon dried rosemary
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1 cup baby carrots, peeled and halved
* 1 cup peeled and cubed potatoes
* 1 cup frozen peas
Instructions:
1. Brown the beef: Heat olive oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Add beef and cook, stirring occasionally, until browned on all sides. Remove beef from pot and set aside.
2. Sauté the vegetables: Add onion and garlic to the pot and cook until softened, about 5 minutes.
3. Make the roux: Stir in flour and cook for 1 minute, stirring constantly.
4. Add the liquids: Gradually whisk in diced tomatoes, beef broth, water, and red wine (if using). Bring to a boil, then reduce heat to low.
5. Add the herbs and seasoning: Stir in thyme, rosemary, salt, and pepper.
6. Return the beef: Add the browned beef back to the pot.
7. Simmer: Cover and simmer over low heat for 1.5-2 hours, or until beef is very tender.
8. Add the vegetables: After 1.5 hours, add carrots and potatoes. Continue to simmer for 30 minutes, or until vegetables are tender.
9. Add the peas: Stir in frozen peas during the last 10 minutes of cooking.
10. Serve: Serve hot with crusty bread.
Tips:
* For a richer flavor, use beef stock instead of water.
* Feel free to add other vegetables, such as mushrooms, turnips, or parsnips.
* To thicken the stew, stir in a tablespoon of cornstarch mixed with 2 tablespoons of cold water at the end of cooking.
