Your family will love this fresh tasting soup.
Things You'll Need
- One pot
- 2 tbsps. salt
- 1 tbsp black pepper
- 1 cup, chopped onion
- 1 cup, chopped celery
- 8 small fresh potatoes, cut in quarters
- 1 jar fresh canned tomatoes
- 3 to 4 sprigs cilantro
- 4 cups water, you will need to add more to keep it a soup consistency
- 4 - 5 slices bacon
Instructions
-
Get a pot.
I used a regular 6 qt cooking pot for my soup.
Add the salt, black pepper, and the bacon. -
Add 2 tablespoons of garlic powder or chop fresh garlic. Add the sprigs of cilantro.
-
Open the tomatoes, and put the whole jar in, including the tomato juice. If you didn't home can, you may need to use store bought, or fresh tomatoes.
-
Cut your potatoes in quarters. If using new potatoes, you can wash, scrub and quarter. Older potatoes will have to be peeled.
-
Peel and chop your onions.
-
Wash and strip your celery.
-
The bacon does not take as long as the potatoes to cook, so you will need to cook until the potatoes are done. Serve with crackers, your favorite sandwich, or bread and butter. Either way, you have a great soup.
