Old Fashioned Red Eye Gravy
This recipe yields a classic, hearty red eye gravy that's perfect for breakfast or brunch.
Ingredients:
* 2 cups of strong brewed coffee (preferably freshly brewed)
* 1/4 cup bacon fat (or substitute with butter)
* 1/4 cup all-purpose flour
* 1/2 teaspoon salt

* 1/4 teaspoon paprika (optional)
* 1/4 cup chopped cooked bacon (optional)
Instructions:
1. Make the coffee: Brew strong coffee using your preferred method.
2. Cook the bacon: If using bacon fat, cook the bacon until crispy. Remove the bacon from the pan and set aside. Leave the bacon fat in the pan.
3. Make the roux: In a medium saucepan, heat the bacon fat (or butter) over medium heat. Whisk in the flour until smooth and bubbly.
