Jus (/dʒuː/) or sauce jus (French: [ʒys]) is a sauce made by simmering meat trimmings, vegetables and aromatics in water, white wine, or stock. It is thickened by reduction and addition of butter (to make a sauce liée), or starch (to make a sauce liée-liant), or liaison.
