Ingredients
* 3 pounds sweet potatoes, peeled and cubed
* 2 tablespoons olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup brown sugar
* 2 tablespoons butter, divided
* 1/4 cup chopped pecans
Instructions
1. Preheat the oven to 375 degrees F (190 degrees C).
2. In a large bowl, combine the sweet potatoes, olive oil, salt, and pepper. Toss to coat.
3. Spread the sweet potatoes in a single layer on a baking sheet.
4. Bake in the preheated oven for 20 minutes, or until the sweet potatoes are tender and browned.
5. In a small saucepan over medium heat, combine the brown sugar and 1 tablespoon of the butter. Cook, stirring constantly, until the sugar is dissolved and the mixture is bubbly.
6. Pour the brown sugar glaze over the sweet potatoes and toss to coat.
7. Sprinkle the sweet potatoes with the pecans and the remaining 1 tablespoon of butter.
8. Bake in the preheated oven for an additional 10 minutes, or until the sweet potatoes are heated through and the pecans are toasted.
9. Serve immediately.
