* Smell. If the potatoes have a sour or off odor, they are likely bad.
* Texture. If the potatoes are slimy or watery, they are likely bad.
* Color. If the potatoes are dull gray or brown, they are likely bad.
* Taste. If the potatoes taste sour or bitter, they are likely bad.
If in doubt, it is always best to throw out mashed potatoes that you are not sure are fresh.
