Why is blue cheese green?
Blue cheese isn't typically green, it is usually various shades of white or sometimes yellow. Some blue cheeses, like Stilton, may have blue or greenish veins as a result of the presence of certain mold cultures, specifically Penicillium roqueforti. When the cheese is exposed to air, the mold spores start to grow, creating colonies of blue-greenish color within the cheese.
