Can I Freeze Creamed Irish Potatoes?

Embodying a rich, rustic texture, creamed Irish potatoes lend themselves well to storing in the freezer. Basically known stateside as "mashed potatoes," creamed Irish potato recipes usually call for similar ingredients to their overseas counterparts. Served as a side dish, creamed Irish potatoes may be made ahead of time, frozen, thawed and reheated for an upcoming family meal.

Storage Time

  • Creamed Irish potatoes are an convenient side dish to store in the freezer for whenever you need a substantial startchy vegetable on the plate. They have a shelf life of five to seven days in the fridge and six to eight months in the freezer. Once the potatoes are stored in the freezer, they will techincally keep indefinitely as food borne bacteria cannot grow in that environment. Though, over time the flavor of the potatoes will deteriorate and they may become susceptible to freezer burn, so it's best to consume them within an eight-month window, max. Additionally, when making the recipe, use cream with a fat content of greater than 40 percent for best freezing results as lighter creams do not freeze as well.

Safe Storage

  • Before placing the potatoes in the freezer, allow them to cool to room temperature so condensation or steam does not build up in the container. After cooling, transfer the potatoes to an airtight container or sealable bag. This will keep the flavors from other foods out while ensuring that the potatoes do not form ice crystals or suffer from freezer burn. If using a sealable bag, remove any excess air from the bag as you close the seal.

Thawing

  • Thaw the potatoes in the fridge for about 24 hours before you wish to serve them. While you may also use the defrost function on your microwave, you run the risk of defrosting the dish unevenly. Never thaw the potatoes on the counter, as bacteria can start to grow as they defrost.

Reheating

  • Once the potatoes are thawed, you can quickly reheat them by placing them in the microwave for a minute at a time. Stir the potatoes after each minute to ensure they are evenly heated. You may also reheat the potatoes over low to medium heat in a small saucepan. In either method, you may need to add more milk or cream to attain the desired consistency. Add about 1/4 cup at a time and stir until you achieve the desired results. Serve the creamed potatoes once they are heated through.
